Aslams Recipe Corner

GOSHT ACHAR


INGREDIENTS


1kg Boneless lamb, cut into cubes
6 Dst sp vegetable oil
1 Medium onion, chopped
2 Dst sp garlic puree
1 Dst sp ginger puree
3 Medium tomatoes
3-4 Green cardamoms, whole
1 Dst sp coriander seeds, ground
½ Dst sp cumin seeds, ground
½ Dst sp fennel seeds
½ Dst sp fenugreek seeds
½ Dst sp mustard seeds
½ Dst sp onion seeds
½ Dst sp garam masala
1 Dst sp red chili
¼ Dst sp turmeric powder
4-5 Fresh green chilies, whole
6 Bay leaves
1 Handful fresh coriander, chopped
2 Dst sp natural yoghurt
1 Dst sp white vinegar
½ Dst sp salt

METHOD

1. Heat oil, add onion and fry until light brown.
2. Add garlic, ginger and tomatoes and fry together with onion.
3. Add lamb and salt and cook until lamb is tender.
4. Add green cardamoms, fennel seeds. Fenugreek seeds, mustard seeds, onion seeds and bay leaves and cook for a few good minutes. Then add yoghurt and vinegar.
5. Add ground coriander, ground cumin, red chili powder, turmeric powder and green chilies and stir until spices are fully cooked.
6. Add fresh coriander and cook for a few minutes.
7. Sprinkle with garam masala and serve.
